Udon Cacio e Peppe

I N G R E D I E N T S
- Udon noodles: 200g
- Pecorino Romano: 40g
- Black Kampot Pepper: 2tbsp
- Butter: 2 tbsp
- Salt
D I R E C T I O N S
In a large bowl, grate the pecorino cheese and add the ground black pepper to taste.
Toss the Udon noodles in a large pot of boiling water with salt. We recommend undercooking them to get a firm texture.
Bring a good tablespoon of butter to melt in a pan. Add pepper and cook to release flavors.
Add a spoon of Udon water a bring to simmer. Add pasta and a tablespoon of butter. Remove from the heat and stir in the pecorino cheese.
